Evaluating Hypoglycaemic Activity of Pomegranate Peel Powder and Defatted Soybean Flour Formulated Cookies in STZ Induced Diabetic Rats

Pomegranate fruit peel is an inedible part obtained during the processing of pomegranate juice. Compared to pulp fraction, it contains more total polyphenols and has a better antioxidant potential. Even though they are good sources protein, dietary fiber, variety minerals, phytochemicals, soybeans often have nutritional function. When utilized partially replace wheat in bread items, quality will be improved. In present investigation, defatted soybean flour (DSF) powder (PPP) based cookies were made, their effectiveness on glycemic activity at serum level was investigated using two concentrations—5 g 10 g/rat/day diabetic non-diabetic induced rats for up 21 days. Serum glucose, cholesterol, haemoglobin levels favourably affected (-56.92%, -56.33%, +22.34% correspondingly) by laboratory diet plus 10g per rat day G6 group after trial (21 days). rats, PPP DSF included that lowered blood glucose cholesterol raised content, but kept required range regardless dosage cookies.
